love the superfood: spinach! 
There is a vegetable I discovered recently that I didn't think I would like, but I loved it and that is spinach. I have spinach on sandwiches and salads and it compliments chicken/turkey really well! I have eaten spinach regularly over a couple of years now and my health has improved significantly. There are many benefits to be gained from eating this superfood:
It has anti inflammatory properties.
It has many anti-oxidants: vitamin C, vitamin E, Zinc, Manganese and Selenium.
