Terdapat 2 perkara penting dalam rojak Mamak ni...satu kuahnya dan satu lagi bahan cucurnya. Cucur pula terdapat 3 jenis, cucur udang, cucur kelapa dan cucur beras atau kerepek
Bahan Rojak
Sengkuang dihiris nipis memanjang
Timun dihiris nipis memanjang
Taugeh dicelur sedikit
Tofu kuning digoreng dan dihiris nipis
Kentang direbus dan dipotong
Telur Rebus
Cucur Kelapa dipotong
Cucur Naik dipotong
Cucur Beras dipatah dan ditabur atas
Bawang Goreng ditabur atas
Cucur Kelapa
1/2 cawan tepung beras
1/2 cawan tepun gandum
1/2 cawab kelapa parut (hampas kelapa pun boleh)
bawang kecil di mayang halus,
garam secukup rasa
sedikit sodium bicarbonate
gaul dan buatkan dough semua ramuan diatas sekira2 boleh digumpal dgn tangan. cucurkan kedalam minyak yg telah berpijar panas.
Cucur Naik
1 cawan tepung gandum
1/4 st baking powder
1/4 st soda
30sen taugeh basuh bersih
1/2 st serbuk kunyit / pewarna
1 st gula
1/4 st garam
125 ml air (anggaran) * jangan cair sangat nanti cucur leper
1 biji telur
Cara Membutnya :
Campurkan semua bahan kecuali telur dan taugeh serta garam. Gaulkan sampai sebati & perap selama 1 jam.
Masukkan telur dan taugeh serta garam kacau rata. Panaskan minyak dan goreng keemasan.
Cucur Beras atau Kerepek
250gm tepung beras.
1 sudu besar (tbsp) tepung ubi kayu (topiaca flour).
Minyak untuk goreng.
Bahan-Bahan Perencah untuk dikisar:
5 ulas bawang putih.
5 biji buah keras.
1 sudu kecil (tsp) serbuk ketumbar, biji ketumbar digoreng kering dan ditumbuk/ kisar kasar.
1 biji telur.
50 ml santan cair.
Garam secukup rasa.
Cara Membuatnya:
Sebatikan tepung beras dan tepung ubi dengan bahan kisaran.
Cairkan tepung tadi dengan tambahan 250ml santan cair, supaya terbentuk tepung yang cair dan sesuai untuk dituang ditepi kuali.
Panaskan minyak, bila minyak panas cukup, ambil sesenduk tepung cair dan tuangkan dikeliling gerigi minyak ditepi kuali. Bila warnanya tukar keemasan kuning , kupil tepung itu dengan perlahan dan biarkan ia terapung ke tengah kuali. Bila cukup garing, keluarkan dan diletakan ke atas kertas tuala dapur (kitchen toel paper) untuk menyerap minyak.
Patahkan saiz yg dikehendaki dan taburkan ke atas rojak anda. Ia memberi kelazatan yang istimewa pada hidangan rojak anda.
Kuah Rojak
1/2 kg. ubi keledek berwarna oren,dibuang kulit dan rebus. Air rebusan ubi boleh digunakan untuk kisar ubi (kalau malas nak lenyek).
125gm udang kertas halus goreng dulu udang itu 1/4 masak.
125gm. kacang tanah.(goreng tanpa minyak dan dibung kulitnya)
10 – 15 biji cili kering. Untuk kepedasan biasanya kita gunakan cili kering. Cili kering perlu goreng dengan minyak lebihan gorengan kacang sehingga ranggup.
3 ulas bawang putih. digoreng layu, dikisar bersama kacang tadi.
2-3 bawang besar digoreng layu
gula dan garam secukup rasa
Cara Membuatnya
Bila semua bahan tadi telah dikisar, masukkan dalam periok dan masukkan 4 cawan air dan masak hingga mendidih, bila sudah mendidih kecilkan api, ambil lebih kurang 2 sudu besar (tbsp) asam jawa dan perahkan dengan 1/2 cawan air, tapis dan masukkan dalam kuah yang sedang masak. Masukkan gula sebanyak 5 sudu besar. Masukkan garam secukup rasa.
Katakanlah anda inginkan kuah yang lebih dan pekat likat seperti mamak buat kuah, rendamkan 5-8 kping biskut merry, lenyekan dan masukkan dalam kuah yang reneh.

- 1 biji bawang labu sederhana besar, di hiris halus, di gaul dengan sedikit tepung beras dan digoreng sehingga garing warna keemasan. Asingkan. Minyak gorengan tadi ambil dua sudu besar dan simpan dan gunakan untuk gorengan kacang panjang.
- 2 sudu besar kacang tanah goreng tumbuk.
- 4 dan 1/2 sudu kecil sos ikan.
- 1 sudu besar jus limau nipis.
- 2 tsp gula.
- Garam secukup rasa.
CARA MENYEDIAKAN;
1. Potong kacang panjang dalam 2 inci panjang. Sediakan air mendidih di dapur. Masukkan garam dan sedikit minyak. Celurkan kacang panjang dalam 1-2 minit. Keluarkan, toskan dan lalukan air sejuk untuk matikan haba dalam kacang. Cara ini untuk kekalkan rangup dan warna asal kacang.
2. Panaskan kuali dan masukkan minyak yang dari gorengan bawang, masuk kacang panjang, kacang tanah, sos ikan, sos limau, gula dan garam. Goreng dalam 1 atau 2 minit dengan api keras sedikit.
3. Hidangkan dengan bawang goreng segar di atas. selamat mencuba.

Bagi anda yang berbadan besar/gempal, jangan seringkali berputus asa dengan fesyen yang ingin anda tampilkan kerana  anda juga boleh berfesyen asalkan kena pada rekaan dan warna yang dipilih.

Rekaan yang sesuai untuk anda adalah rekaan yang mempunyai potongan paras bawah dada atau empire cut, rekaan yang bawahnya kembang dan tidak mengikut bentuk badan.

Pemilihan warna pula haruslah yang gelap dan corak menegak dan kecil. Ini akan membuatkan anda kelihatan kurus dan tinggi. Pemilihan fabrik juga penting kerana fabrik yang kasar akan membuatkan penampilan anda kaku, jadi pilihlah fabrik yang lembut.

Krim Karamel

Manisan yang paling mudah, ringkas dan rasanya memang lazat! Krim Karamel merupakan satu lagi resepi puding yang menjadi kegemaran dan begitu popular di Malaysia. Sajikan kepada anak-anak dan suami tanpa mengira waktu, tentu tidak cukup! Sememangnya sungguh mengkagumkan. Jangan ketinggalan untuk mendapatkan resepi Krim Karamel ini dengan menyediakan bahan-bahan di bawah.

Bahan-bahannya:

500 gm gula pasir - dimasak
200 ml air putih
1 liter susu segar
2 sudu makan esen vanila
10 biji telur

Cara membuatnya:

  • Masak gula bersama air hingga bertukar warna menjadi coklat emas. Letak di dalam mangkuk dan sejukkan.
  • Dalam pada itu panaskan susu segar dan masukkan esen vanila, gula dan telur. Kacau hingga sebati. Selepas itu tuangkan air gula yang telah dimasak tadi.
  • Masak di dalam ketuhar dengan suhu 180 darjah selama 45 minit. Setelah masak, sejukkan di dalam peti sejuk dan hidangkan.

1. Amalkan mandi dengan menjirus dari bahagian bawah iaitu kaki sebelah kanan dulu.
2. Kemudian diikuti kaki sebelah kiri, lalu naik sedikit demi sedikit hingga ke paras lutut, peha, pinggang, dada dan bahu.
3. Apabila kesemua bahagian bahu ke bawah sudah basah, baharulah menjirus bahagian kepala.
4. Petua ini jika diamalkan, anda akan jarang menghidap demam.

RESEPI TOSEI MAMAK PENANG oleh mamak haji

RESEPI TOSEI MAMAK PENANG:
BAHAN-BAHAN:
1 cawan kacang tosei (putih).
3 cawan beras / Tepung beras
1 sudu biji Halba/Fenugreek seed)
1 sudu kecil garam.
1 cawan nasi sejuk (untuk mengebukkan tosei dan membantu percepatkan proses fermentasi)*.
CARA-CARA PENYEDIAAN:
1. Basuh kacang tosei, beras dan halba dan rendamkan dalam air sekurang-kurang 6 jam. (Pagi rendam, petang mula mengisar dan keesokan pagi anda boleh memasak). nota: sekiranya gunakan tepung beras tidak perlu direndam. Adunkan saja dengan kacang tosai yang telah dikisar.
2. Kisar bersama nasi sejuk ketiga-tiga bahan tersebut dengan sedikit air. Tentukan kisaran anda jangan terlalu cair . Kisar sehingga halus. Masukkan adunan itu dalam bekas dan peram semalaman. Jangan terlalu lama peram. Adunan akan menjadi bertambah masam. Sekiranya ingin simpan adunan yang berlebihan simpan di dalam peti sejuk. Boleh digunakan tiga atau empat hari.
3.Jangan masukkan garam semasa pemerapan, kerana garam boleh membunuh bakteria baik semasa proses pemerapan. Adunan tosei tidak akan menjadi. Biasanya adunan akan bertambah dua kali kuantiti yang asal. Hanya masukan garam semasa mula memasak tosei.
4.Jika bancuhan adunan anda terlalu pekat, cairkan sedikit dengan menggunakan air sejuk (tap water). Bancuhan tosei boleh diuji kepekatan dengan menggunakan senduk dengan menceduk sedikit adunan. Sekiranya adunan yang baik akan melekat pada permukaan senduk.
5.Masak tosei sama seperti kaedah membuat ketayap (kuih gulung inti kelapa). Ceduk penuh adunan dengan senduk sederhana dan tuang di kuali tak melekat atau kuali leper (kuali leper permukaannya perlu sapu minyak). Buat putaran sehingga tepung anda menjadi nipis dan bulat. Tutup permukaan tosei dgn penutup. Api dapur perlu sentiasa dijaga. Tosei masak dgn cepat 1-2 minit. Keluarkan tosei anda dan lipat sama rata.
Tosei boleh makan dengan sambal tumis ikan bilis, daging rendang, kari ayam, kari sardin atau dengan kuah dhal. Mamak haji tak galakan makan tosei dengan sambal kelapa seperti di restoren, kerana kelapa punyai kandungan lemak yang tinggi.
NOTA:
Kalau anda ingin Tosei anda lembut, tambah lebih sedikit kacang tosei.
kalau anda inginkan tosei anda rangup tambahkan lebih sedikit tepung beras.
