Spicy Tuna Chips
INGREDIENT
1 can flakes spicy tuna in olive oil (with oil)
350g plain flour
1 tsp salt
1 tsp turmeric powder
2 tsp chilli powder
1 tsp whole fennel seeds
2 stalks fresh curry leaves, finely sliced
Extra flour for dusting
Oil for deep frying
METHOD
1. Prepare the dough by mixing all the dry ingredients. Add in tuna and olive oil. Mix into a dough, wrap it in cling film and let it rest for 10 min.
2. Heat enough oil in a wok for deep frying. Roll out the dough as thin as possible and cut into desired ships - strips, squares etc.
3. Fry chips until crispy, drain off excess oil on a paper towel
