Potatoes are uses as a primary ingredient in many dishes. Do you know about green potatoes? These green potatoes are green due to high amount of chlorophyll .But food lovers, that green potatoes are very dangerous for health.
The scientific researches are say that green potatoes have high amount of a poisonous chemical called solanine that can lead to nausea, headaches diarrhea, vomiting & many other ailments, if it is consumed by fault.
The green colour of a potato is mainly due to high amount of chlorophyll, which is basically not harmful for health. But in fact it is a signal that the amount of solanine, which is manufactured at that time when the chlorophyll is also produced, has raised too.
A current report is presented by Alexander Pavlista, who is a professor at the University of Nebraska-Lincon. In the report it was told that — a 100 pound man would have to consume nearly 16 ounces of a totally green potato to fell ill.
It was noticed that the green potatoes were never send to the market for sale. And to prevent the production of solanine, it is always suggested that potatoes should be stored in cool and dim light places, remove the green areas before its consumption.

If the taste of the green potato — is found to be bitter, than don’t consume it. This green diet would prove to be harmful so just avoid it.

NASI GORENG TOM YAM

RESEPI; NASI GORENG TOM YAM / "KHAO PAD TOM YUM".
BAHAN-BAHAN:
- 3 cawan nasi. (sila baca penyediaan nasi goreng posting mamak haji).
- 5 tangkai cili kering.
- 4 - 6 cili padi merah.
- 2 sudu besar serai dihiris. Ambil bahagian putih saja.
- 2 sudu besar lengkuas dihiris.
- 4 helai daun limau purut, dibuang tulang tengah dan dihiris.
- 2 sudu pes Nam Prik (sila baca posting mamak haji cara penyediaan).
- 1 biji bawang labu besar dihiris halus.
- 1/2 cawan sayuran anda suka..lada bengala hijau dipotong dadu.
- 2 sudu besar sos ikan.
- 2 sudu besar jus limau nipis.
- 1 cawan isi daging dipotong kiub/ isi udang yang telah buang garis hitam di tengah.
- 3 sudu besar minyak masak.
- sedikit daun ketumbar, tomato, dan hirisan timun untuk hiasan.

CARA MENYEDIAKAN:
1. Cara menyediakan pes cili - kerat serong cili, rebus selama 10 minit. Bila sejuk, perah cili untu keluarkan air. Tumbuk cili ini bersama dengan cili api.
2. Panaskan minyak, masukan pes cili yang telah sediakan, Nam Prik Pao, serai, lengkuas, daun limau purut dan goreng sekejap. Masukkan bawang hiris. Goreng layu bawang. Masukan sayuran goreng selama 3-4 minit.
3. Masukkan udang segar atau daging ayam dan goreng dengan api kecil. Goreng hingga masak 3/4.
4. Masukkan nasi dan besarkan sedikit api dapur. Masukkan sos ikan untuk keasinan. Jika kurang tambahkan 1/2 sudu kecil lagi sos ikan. Di akhir gorengan masukkan jus limau nipis. Goreng 1-2 minit..angkat dan hidangkan.

PES NAM PRIK PAO oleh mamak haji

PENYEDIAAN PES NAM PRIK PAO 

Bahan-Bahan:

1 1/2 cawan hirisan bawang merah (gunakan bawang goreng yang telah siap).
1 cawan hirisan bawang putih 30-40 ulas.
3/4 cawan minyak masak.
25-30 cili kering.
1/4 sudu (tbsp) garam.
1/2 cawan udang kering.
2 1/2 - 3 sudu besar (tbsp) air asam jawa pekat.
1-2 sudu sos ikan (mengikut rasa).
Kiub Belacan basah satu inci X satu inci.
1/3 - 1/2 cawan gula melaka atau mengikut rasa.
2 sudu besar air.

CARA-CARA:

1. Goreng Bawang Putih memerlukan kesabaran. Kalau boleh dapatkan yang telah goreng siap. Goreng bawang putih gunakan sedkit minyak minyak dan sekali-sekala kacau rata sehingga hirisan bawang putih bertukar warna kepada keemasan. Keluarkan dan tapis minyaknya. Minyak gorengan ini jangan buang. Simpan untuk semasa masak sambalnya.

2. Panaskan kuali (tanpa minyak), goreng kering cili kering dengan sedkit garam dengan api dapur yang sederhana. Garam digunakan untuk mengelakan asap yang dikeluarkan oleh cili kering. Asap ini pedihkan mata dan kerongkong. Kacau selalu sehingga keluar aroma haruman dan cili bertukar kepada warna perang. Selepas keluarkan cili, gorengkan pula udang kering sehingga aromanya keluar. Keluarkan dan sejukkan sebelum dikisar halus.

3. Bungkuskan belacan basah dalam alluminium foil dan bakar dengan api dapur gas yang terdedah dengan memegang dengan penyepit makanan. Pusingkan sentiasa untuk dapatkan pembakaran yang sekata. Bakar sehingga baunya menusuk ke hidung anda. Sejukan dan potong bahagian kecil-kecil.

5. Adunkan semua perencah di atas dengan 2 1/2 cawan air, 3 sudu besar asam jawa, 1-2 sudu besar sos kicap ikan, 1/3 cawan gula melaka dan 2 sudu besar air dan kisar sehingga halus. Panaskan kuali api yang sederhana dan masukkan baki minyak yang telah digunakan untuk goreng bawang putih. Goreng sehingga sambal pecah minyak. Sekiranya terlalu pekat sambal anda tambah sedikit air jika perlu. Pes Nam Prik Pao anda telah siap. Masukkan dalam botol yang bersih dan tutup. Boleh digunakan sehingga tempoh 3-4 bulan pes ini.

TIP-TIP MASAKAN TOM YAM:

1. Dalam masakan ini, sukatan perencah-perencah masakan guna "Hukum Ibu Jari". Sekiranya gunakan dua cawan air untuk membuat sup tom yam, gunakan 1 helai daun limau purut, 2-3 keping lengkuas segar dan 1 inci panjang serai. Dharabkan saja sekiranya gunakan lebih dari dua cawan kesemua perencah tersebut.

2. Jangan gunakan cuka untuk jimatkan kos bahan masakan ia akan jadikan menu masak cuka pulak.Menggunakan jus lemon dalam masakan asia tenggara adalah terhad dan jangan guna jus lemon, ia akan pahitkan masakan anda sekiranya masak cara Asia tenggara. Gunakan hanya jus limau nipis untuk mengekalkan rasa asli tom yam anda.

3. Masukkan jus limau nipis, cili api (cabai burung) yang segar, daun saderi(cilantaro) atau daun bawang atau daun pudina segar hanya selepas Sup tom yam anda dikeluarkan dari api dapur dan sedia untuk hidangan. Sekiranya anda masukan Tomato segar tentukan tomato hanya dimasukkan sebelum 1 minit matikan api dapur. Ia untuk mengekalkan kesegeran haruman bahan-bahan tersebut.

4. Sukatan bagi sos ikan Thai, jus limau dan cili padi bagi setiap 1 cawan air 2 sudu besar.

5. Resepi Tom Yam yang amat digemari ialah sup yang berwarna oren. Warna adalah tambahan keenakan sup Tom Yam dan juga menutup ketulan daging atau ayam yang kelihatan hodoh. Pes ini juga memberi aroma ynag amat menyedapkan. Pes cili Thai ini (seakan sambal tumis) ini digelar, " Nam Prik Pao". Pes ini biasanya diperbuat daripada bahan-bahan cili kering, udang kering atau pun ikan kering, belacan, bawang putih, halia dan bawang merah. Ia diadunkan dengan sos ikan, asam jawa dan gula melaka dan dimasak dengan minyak seperti sambal tumis kita. Nam Prik Pao juga boleh digunakan sebagai bahan tumisan yang sedap untuk masakan tom yam, masakan laut, sayur-sayuran dan juga untuk hidangan mee.
